Have you considered using KiCad for the training course? It has some powerful featues including differential trace placement and trace length adjustment, just like Altium. But it’s free and runs on any Windows, Mac, or Linux PC.

At this moment I am working on Orcad/Allegro. However, I know, that there are some people doing courses based on KiCad (check out Chris Garmmell’s website Contextual Electronics https://contextualelectronics.com/ ).
PS: To answer your question. I have considered KiCad for one of my projects, but it doesnt really depends on me. If I use KiCad in the project, then I would make a course using KiCad.
